Steps
Cook the chicken: Season 2 boneless, skinless chicken breasts with 0.5 teaspoons salt and 0.3 teaspoons black pepper. Heat 2 tablespoons olive oil in a skillet over medium-high heat and cook the chicken until golden and cooked through, about 14 minutes 14:00per side.
Rest and slice the chicken: Let the chicken rest for a few minutes, then slice into strips.
Make the Caesar dressing: In a small bowl, whisk together 0.5 cups mayonnaise, 2 lemon, juiced, 2 garlic cloves, minced, 1 teaspoons dijon mustard, and 1 teaspoons anchovy paste (optional) until smooth. Season to taste.
Dress the lettuce: In a large bowl, toss 2 romaine lettuce, chopped, heads with the dressing until evenly coated.
Add parmesan and croutons: Add 0.5 cups grated parmesan, plus extra for topping and 1 cups croutons, tossing gently to combine.
Assemble and serve: Top the salad with the sliced chicken and extra parmesan. Serve immediately.
