Fluffy Buttermilk Pancakes with Honey & Berries

- 1 large eggs

1 Mix the dry ingredients: In a large bowl, whisk together 1.5 cups all-purpose flour, 2 tablespoons sugar, 1 tablespoons baking powder, and 0.5 teaspoons salt until well combined.
2 Mix the wet ingredients: In another bowl, whisk together 1.3 cups buttermilk, 1 large eggs, 3 tablespoons unsalted butter, melted, and 1 teaspoons vanilla extract until smooth.
3 Combine the batter: Pour the wet ingredients into the dry ingredients and stir gently just until combined — a few lumps are fine. Don’t overmix or the pancakes will turn out dense.
4 Rest the batter: Let the batter sit for a few minutes while your pan heats up. This helps the pancakes turn out extra fluffy.
