Molten Chocolate Lava Cakes
Rich, fudgy chocolate lava cakes with a molten center — an elegant dessert that’s surprisingly simple and ready in under 30 minutes.

Ingredients
- 6 ounces semi-sweet chocolate, chopped
- 0.5 cups unsalted butter, plus extra for greasing
- 1 cups powdered sugar, plus extra for dusting
- 2 large eggs
- 2 large egg yolks
- 1 teaspoons vanilla extract
- 0.3 cups all-purpose flour
- 0.3 teaspoons salt
- 1 cups vanilla ice cream, for serving

Steps
1 Prep the ramekins: Preheat the oven to 425°F (220°C). Grease four ramekins with butter and dust with powdered sugar, tapping out the excess.
2 Melt the chocolate and butter: Melt 6 ounces semi-sweet chocolate, chopped and 0.5 cups unsalted butter, plus extra for greasing together in a heatproof bowl over a pot of simmering water, or in the microwave in short bursts, stirring until smooth.
3 Add sugar and eggs: Whisk 1 cups powdered sugar, plus extra for dusting into the melted chocolate until smooth, then whisk in 2 large eggs, 2 large egg yolks, and 1 teaspoons vanilla extract.
4 Fold in the flour: Gently fold in 0.3 cups all-purpose flour and 0.3 teaspoons salt until just combined — don’t overmix.
5 Fill the ramekins: Divide the batter evenly among the prepared ramekins
6 Bake the cakes: Bake until the edges are firm but the center still looks soft, about 13 minutes 13:00
7 Unmold and serve: Let the cakes rest for 1 minute 01:00, then run a knife around the edges and invert onto plates. Serve immediately with 1 cups vanilla ice cream, for serving.
